BBQ’s are fun by definition, which makes them perfect opportunities to get motivated about eating healthier or to try out new dishes. (Your family and friends may even want to help out!)

Sadly, vegetables typically take a backseat to barbeque standards like burgers and hotdogs and all too often end up overcooked, burnt or cremated-when smaller pieces slip through the grate. While discouraging, these vege-tastrophes can be easy to prevent, and a few simple but essential guidelines will help you make veggies that steal the show. Grilling preserves more natural nutrients and flavor than boiling or frying, and unlike meats, vegetables don’t have to be cooked thoroughly like animal products which can be contaminated with bacteria like salmonella.

bbq veggiesPreparation With a few exceptions, the general rule is to choose vegetables that aren’t too moist or dry, e.g., cucumbers and most leafy greens wouldn’t work well.

Wash and dry the grill and vegetables. Don’t wash mushrooms because they’ll plump up and develop a soggy texture in water. It’s better to wipe them with a paper towel instead. Vegetables like corn and potatoes that take longer to cook can be soaked in water for up to half an hour for juicier results.

Cut the vegetables into pieces large enough they won’t fall through the grate or approximately an inch thick. Keep in mind that larger cuts need more time on the grill and risk getting overcooked on the outside. Vegetables like asparagus, hot peppers and baby mushrooms are small to begin with, so I would recommend using a grilling basket. Apply a cooking spray or oil to the grill and vegetables to prevent sticking. Use a brush to minimize excess oil that can start fires, and never pour oil over a hot grill! Another popular coating method is shaking up the veggies in a sealed bag with a bit of olive oil, maybe a bit of balsamic vinegar also.

I know it’s tempting, but try not to go overboard with marinades; using too much sauce can overpower the already delicious and natural taste of vegetables, and sweet marinades burn easily. Grilling On a gas grill, bring the temperature to medium-high. Foods like potatoes and corn take more time, whereas asparagus and peppers are done in just a few minutes. For most types of vegetables, plan on grilling them for 3 to 10 minutes. One tip that’s not only prudent but will almost certainly improve your barbeques is never leave the grill while cooking-watching your food is one of the best ways avoid overcooking it. When in doubt, it’s better to undercook vegetables than to risk drying out their flavors and nutrients.

Listed below are some of our favorite vegetables for grilling, and some helpful tips on preparing each one. Take them as suggestions, especially since cooking time can vary from grill to grill.

Asparagus: cut of the thick bottoms, then soak in water for half an hour and pat dry. Use a brush to lightly glaze the asparagus with oil. Unless using asparagus with broad stalks, use a grilling basket or skewers to make them easier to maneuver on the grill. Cook for 1-2 minutes on each side, or until the tips start turning brown.

Portobello Mushrooms: Wipe portobellos with a towel instead of washing them, then apply oil. The portobello’s naturally dark color makes it harder to tell when it’s ready; only grill for 2-3 minutes on each side.

Onions: Onions tend to fall apart on the grill, but thick horizontal cuts will hold together better.

Corn on the Cob: Soak corn in water for half an hour, then wrap in foil with a bit of olive oil and grill for 5-10 minutes.

Bell Peppers: The flesh on peppers is thin and its skin burns fast, so only grill them for 3-4 minutes. Turn once a minute to cook them evenly.

Tomatoes: A BBQ anomaly, grilled tomatoes are quite popular and simple to make. Cut tomatoes in half, and, as always, apply oil before grilling-2 minutes on each side is plenty.

Accommodating Vegetarians at Meat Barbeques An easy way to accommodate vegans or vegetarians is to wrap their vegetables in foil to avoid exposure to any meats on the grill. This will block the smoky barbeque flavor, so you might want to use a grilling basket instead.

I have a particular talent for putting things on the stove, moving on to something else, forgetting about them entirely, and coming back to a pot burned beyond belief. I can’t tell you how many times I’ve done it. And I’ve just done it again.

Teaching Your Children the Joys of Cooking

child cookingIntroducing your children to new foods can be as easy as getting them in the kitchen to help you prepare a meal. When my children were little I mean at the age of 2 to 3 you pick them up and set them on the counter top. I know, I know 2 years old seems young but the younger you start the more comfortable they will feel in the kitchen. I remember their first experience of trying to crack and egg. The look on their face when you tell them its ok to hit the egg on the counter or the edge of a bowl. Put the egg into their little hands and help them crack that first egg, then watch the magic happen. Their little eyes will light up and the expression on their faces will forever be in your memory. Give them as many jobs as you can in the kitchen even if their help is not really help but a deterrence and makes making dinner a 2 hour project instead of the usual half hour. I use to let my kids beat the eggs before scrambling, measure the flour for baking and always they get to taste as you progress through the recipe.

Letting kids in the kitchen opens up a whole new way to teach and expand their culinary experiences. Teaching good cooking skills at and early age will never be wasted, even if you find that this is not something they like or would do on a regular basis. I believe that giving kids the chance to experience the touch , the feel and all the smells related to the culinary field will widen their minds to questioning and being curious of the foods of the world.

I remember letting my kids pick one exotic fruit or vegetable from the produce department at the grocery store if they accompanied me. This didn’t happen too often because my trips to the grocery store use to be the only time I got away for the kids. They only got to pick something out if they behaved in the grocery store and then the sky was the limit. We all have fond memories of the time one of them picked a coconut and trying everything to crack that thing open., or the time they picked a fresh pineapple and their tongues and lips swelled because of too much acid from eating the whole thing. One of the funniest stories I remember was the time they picked a kiwi and insisted on taking it to school for show and tell. They wanted to put it in a brown bag and not let the kids see it, just put their hands in the bag and feel it. Knowing that if you didn’t see the kiwi you would probably think it was some type of small animal. They could picture the squeals now from most of the little girls in the room.

Being busy that morning I didn’t notice that they put the kiwi in a brown paper bag and dropped it into their back pack. My children rode the bus to school, and have you ever seen the abuse a back pack gets from and elementary school age child. To say the least, by the time that kiwi got to class it was pretty much squished and oozing juice. There plan was foiled but I still laugh at the thought of those little hands reaching into that bag to feel that kiwi.

Cut some potatoes, sprinkle salt and dash oil or butter over it. Do the same with capsicums. Put seasoned chicken on top tray, potatoes and capsicums on lower tray. Roast at 200 degree for 25mins. Serve with rice.

Slow Cooker Can Give Your Food Its Best Flavor

slow cookerSlow cookers are electrical cooking gadgets that keep a low temperature for long hours for unsupervised slow cooking. Slow cookers are also called crock pots. They are commonly placed on countertops. It is used to cook food requiring low heat and long cooking time.

A slow cooker is usually made of porcelain or ceramic enclosed in metal housing with heating element controlled by a thermostat. The pot cover is commonly transparent glass to see what’s cooking inside. The pot both serves as a container of the food to be cooked and also a source of heat. They come in many sizes, from ½ liter to 7 liters.

A common slow cooker operates at maximum heat of 190 to 200oF. The temperature while it cooks is below 212oF or 100oC, approximately 160oF on low temperature setting. A steady heat from 175 to 200oF is retained by the heating element.

As a general guide, a low setting is used for cheap cuts of mutton, venison, beef, lamb and other red meat. It softens the connective tissues and takes 10 to 12 hours.

Medium setting is used for red meats. High setting is more for pale meat like chicken. This setting cooks faster for about three to four hours with temperature a little higher than that of medium setting.

Auto cook makes food taste better than those cooked with temperature setting of low or medium according to some actual tests. The automatic cook setting initially cooks on high temperature then shifts to low and maintain that temperature continuously. Some slow cookers do not have this setting.

The keep-warm is sometimes referred to as hold setting. It prevents the food from getting cold while keeping its flavor and preventing it from drying out. The slow cooker automatically shifts to keep-warm when the cooking time is reached. It is useful when the crock pot is going to be unattended longer than the required cooking time.

The indicator light is a useful visual aid to know that the slow cooker is on and working.

Check the power cord if it has enough length to reach the power source. Using extension cord is dangerous because liquids might be spilt into it and possibly causes a fire. It is a good idea to purchase a crock pot with a removable liner for the simple reason that it is much easier to clean.

Cheaper cuts of meat when cooked for a short period can be difficult to chew because of its connective tissue and muscles. But then long boiling can dissolve the connective tissue making them dry and hard. Slow cooker’s long and slow cooking will make the tissue soft and the muscle easy to chew.

There are some disadvantages in slow cooking. Sometimes through the process the food loses significant nutrients and vitamins. Enzymes are quickly denaturized when heated at high temperature, giving them less time to act throughout the cooking time.

Vegetables also have a tendency to lose nutrients when its enzymes are not denatured rapidly, as slow cookers cook at heat considerably below the boiling point. Vitamins are retained well when vegetables are quickly cooked because its cells do not potentially lose acids.

Some beans contains toxin that can be eliminated by continually boiling for 10 minutes or longer. It is recommended to boil raw beans before cooking in slow cookers to prevent food poisoning.

Crockpot Recipes – A Busy Mom’s Life Saver

crockpotIf you are a busy mom like me, you probably dread coming home after a long day and making a big dinner for your family. We usually just make the same old think, day after day and week after week. How to we get out of those same old same old blues, you should make your Crockpot become your best friend. When cooking with a Crockpot you can easily prepare the meal the night before start the Crockpot in the morning before you head out for work and have a hot, delicious home cooked meal waiting for you when you come home.

There are many different variations of crackpots out there, and really any of them will do. You can easily purchase one for about ten to fifteen dollars for a basic one. Mine I bought for about 30 dollars but the convince factor of it truly makes up for the cost. Mine is large enough to hold a large roast or chicken, it has a high, medium, low and warm setting. It also has an automatic shut off time for when the meal will be done and sets it on warm waiting for you. It also has a removable insert that is dishwasher safe that is a definite plus. You also can purchase slow cooker bags (much like turkey roasting bags) that minimize clean up.

One of my favorite meals on a cold winter day is beef stew. It is hardier then a soup, and fills you up. Here is an old classic recipe my mother gave me that I use in my Crockpot.

beef stewSlow Cooker Beef Stew:

Ingredients:
1 ½ pounds of beef stew meet 1 inch cubed (usually can purchase pre cut at your grocery store)
12 baby carrots (or 4 medium carrots peeled and cut into 1 inch pieces)
4 white potatoes peeled and cut in chunks
1 onion peeled and quarters
2 tbsp Worcestershire sauce
2 beef bouillon cubes
1 tsp salt
¼ tsp pepper
2 bay leaves
½ tsp thyme
¼ tsp garlic powder
2 cups of beef broth
1 cup of water
3 tbsp flour

To start brown meat in a skillet in oil until lightly brown on the out side (do not cook all the way through). This step can be skipped if desired, but browning the meat locks in the flavor. In the Crockpot layer carrots, potatoes, onions and browned meat, as a note you should always place your vegetables on the bottom of the Crockpot. Add the Worcestershire sauce, beef bullion and all of the spices (except flour). Pour in broth and water to cover the vegetables and meat. Cook on low temp for 8 to 10 hours or on high for 4 to 5 hours. About 30 minutes before you are ready to eat, remove the bay leaves, mix together in a separate bowl the flour and about 1/3 cup of water, add to Crockpot and mix to thicken and make more of a gravy vice broth. Turn the Crockpot up to high and continue to cook an additional 30 minutes. Serve and enjoy.

When it comes to cooking with your Crockpot here are some hints. You can brown meat to lock in the flavors, if you choose not to add 30 minutes to your cooking time to ensure the meat is cooked through. Always place your vegetables on the bottom of the slow cooker so they cook properly. Never open the Crockpot to stir or taste, the heat will escape and you will have to add additional cooking time.
